At the helm of Zale’s culinary journey is Executive Chef Elena Balaska, a visionary whose craft bridges authenticity with innovation. The Mixologist

Behind the bar, Dimitris Papaioannou curates experiences as much as he crafts drinks. With influences gathered from Japan, Latin America, Europe, and the U.S., his cocktail philosophy blends method with imagination — always with a Mediterranean spirit at its core.
Named Greece’s most interactive mixologist of the past decade, he brings to Zale a menu of signature creations where local ingredients, global inspiration, and storytelling meet in the glass.
